Radicchio and Beet salad with Goat Cheese

Bitter and sweet, that’s what this salad is. Radicchio is very bitter, but the apple cider vinegar, salt, and goat cheese soften the flavor. And it’s super fast to make.

Serves 5-6!

Ingredients:

1 head of radicchio, chopped
1 cup boiled, peeled, and diced beets (Trader Joe’s has a nice package of these!)
1 tsp kosher salt
3 Tbls apple cider vinegar
2 Tbls olive oil
Crumbled goat cheese (about 1/3 cup)
1 small Macintosh apple, diced
1/2 small diced shallot (about 3 tsp)

Tools:

Chef’s knife
Cutting board
Small mixing bowl
Salad and mixing bowl!

Mmmmmm…

In a salad bowl, mix together the beets, radicchio, and apple. In a separate bowl, mix together the shallot, oil, and vinegar. Toss with salad, along with salt.
